Dave's Scrambled Parmisan Eggs Recipe

This is another of my favorite breakfasts. It's simple and quick to make.

Ingredients

  • 2 eggs
  • 1/4 cup freshly grated Parmisan cheese
  • 1 Tblsp butter
  • Optional: Chopped green onions

Preparation

  1. Break the eggs into a bowl and whisk.
  2. Grind fresh pepper into the eggs.
  3. Mix the Parmisan cheese into the eggs.
  4. Heat a small skillet and melt the butter into it.
  5. Be careful not to scorch the butter, and then pour the egg mixture into the pan.
  6. Stir the egg mixture with a fork continuously until set, only a couple of minutes is required.
  7. Optional: Throw some chopped green onions in just before the eggs are set.
  8. Turn into a small plate.

This is great with buttered toast and jelly on the side.
