Dave's Hearty Hominy Breakfast Omlette Recipe

This is one of my favorite breakfasts and will really start your day off with a full stomach.

Ingredients

  • 1 1/4" slice of Spam, cut into 1/4" slivers by 1" long, as shown -->
  • 1 1/4" slice of onion, diced.
  • 2 heaping tablespoons of canned mushrooms. Yeah I know, these seem pretty gross to a lot of people, but they're actually very tasty. I buy them in bulk at CostCo and also use them in spaghetti sauce.
  • Approximately 1/3 cup drained yellow hominy.
  • 2 eggs.
  • Mexican cheese.
  • Diced tomato.

I suggest cutting a 1/4" thick slice of Spam, then placing it on your computer screen. Using a very sharp knife, cut along the dotted lines, using your computer screen as a cutting board to make sure your cuts are as precise as possible.

Preparation

  1. Start by lightly browning the Spam in a large skillet with about 1 tsp of olive oil.
  2. After a few minutes, when the Spam is lightly browned, throw in the diced onion.
  3. When the onion is translucent add the hominy and mushrooms.
  4. Keep turning the mixture constantly until the Spam and hominy are lightly toasted.
  5. Break the eggs into a bowl and whisk with a fork. Grind some fresh pepper over the them.
  6. Fold the Spam and hominy mixture into the eggs. It's very important to add the fried mixture to the eggs, and not to simply pour the eggs over the top of the fried bits in the frying pan.
  7. After mixing the eggs, pour them back into the frying pan and spread the fried parts evenly across the pan. Tilt the pan to let the eggs run off the center onto the edges of the pan.
  8. After the bottom of the omlette has set, which is only a minute or two, slip a spatula underneath the edges to loosen it up, then with a deft flip of the frying pan, and with the spatula underneath the omlette, flip the omlette over.
  9. Quickly sprinkle the Mexican cheese on one half of the omlette, and after it starts to melt a bit add the diced tomatos over that half. You might want to sprinkle a bit of salt on the tomatoes, but the Spam is pretty salty already so go lightly. 
  10. Fold the omlette overthe cheese and tomato side and slide onto a plate.

You can serve this as a simple omlette, or with toasted flour tortillas and salsa on the side.
